Are Organic conductors (polyaniline and polyfluorene) in OLED doped?

Typically they're "doped", sort of, by adding an acid. PAni works much better with about 60 mol% HCl added, if I remember correctly; it's lower for other acids. The doping can be done at different stages during the device fabrication process - depends on the format desired and whether the acid is volatile or not, for instance.
